MALPUA / INDIAN PANCAKE



Malpua is a pancake served as a dessert or a snack originating from the Indian subcontinent, popular in India, Nepal and Bangladesh.

INGREDIENTS:

FOR MALPUA

  • 1 cup maida / plain flour / all purpose flour
  • ½ cup rava / semolina / sooji
  • ¼ cup sugar
  • ½ tsp fennel / saunf, powdered
  • ¼ tsp cardamom powder / elachi powder
  • ½ cup milk / rabri
  • water as required, to prepare batter
  • oil for deep frying
  • dry fruits for garnishing

FOR SUGAR SYRUP:

  • 1 cup sugar
  • ½ cup water
  • ¼ tsp cardamom powder / elachi powder
  • few threads saffron

METHOD:

Preparing Batter-

  • In a mixing bowl take 1 cup all-purpose flour, 1 tsp fennel seeds (saunf), 3 to 4 cardamoms, crushed or ⅓ tsp cardamom powder. Mix the dry ingredients well.
  • Add 3 tbsp grated khoya and 3 tbsp curd/yogurt. Please use fresh yogurt. Instead of khoya/mawa you can also use whole milk powder.
  • Add ½ cup water & Begin to stir.
  • Stir to a thick flowing batter without any lumps. cover and allow the batter to rest for 10 minutes.
  • Meanwhile when the batter is resting, crush the dry fruits & keep aside.


Preparing Sugar Syrup-

  • In a pan, pour water & mix sugar.
  • Boil it on a low flame.
  • Put elaichi powder & few saffron threads.
  • You need to maintain 1 string consistency of the syrup, put it in a bowl and keep aside.


Preparing Malpua-

  • Take a flat pan / flat kadai, add ghee or oil in it, heat it on a low flame.
  • Now pour one large spoon of batter in the oil making it flat round in shape.
  • Deep fry it on a low to medium flame.
  • Flip it on intervals to cook on both the sides.
  • Take it out and place it on a kitchen tissue paper.
  • Dip it in the sugar syrup for 10 minutes.
  • Serve it  hot , garnish it with coconut powder & some dry fruits.
