INGREDIENTS:
- 1 cup semolina / sooji / rava
- 1/2 cup wheat flour / atta
- 1/3rd cup oil /butter
- 1/2 cup sugar powder
- 4-5 drops of Vanilla essence
- 1 cup grated carrot
- a pinch of red food colour(optional)
- a pinch of salt
- 1 tablespoon baking powder
- 1/2 tablespoon baking soda
- 1/2 cup buttermilk
- 1/2 cup curd
- 1/3rd cup malai(optional)
- 2 tablespoon crushed dryfruits (cashews, almonds)
METHOD:
- At first, take semolina / sooji in a bowl, add curd, salt, baking powder & baking soda to it and whisk it well without any lumps.
- Next add buttermilk to it (you can make buttermilk at home as well - in 1/2 cup milk add half lemon juice and stir)
- Let the batter set for 30 minutes.
- Now after 30 minutes, add wheat flour, grated carrot, a pinch of red food colour, drops of vanilla essence.
- Next add oil, malai & sugar powder & crushed dryfruits.
- Mix all the ingredients nicely without any lumps, the batter should not be very liquid, a semi thick liquid batter to be prepared.
- Next prepare the base for the cake to bake, you can grease the base utensil with oil and spread some flour ot it, or butter paper can also be used instead.
- Now pour the batter into the base, tap it to give a uniform texture.
- Bake it in microwave(At 180 degree Celsius for 20 mins) , gas oven or cooker as per the comfort.
- After half an hour, take out the baked cake, check using a knife if its cooked completely.
- Let it cool for 15 minutes, you can top it with coconut powder to get more taste.
- Serve the delicious Semolina carrot cake to your loved ones.
