JALEBI





INGREDIENTS Instant Jalebi Recepie
(Serves 4)


FOR JALEBI BATTER:

  1. ½ cup all purpose flour / maida
  2. 1 tsp corn flour
  3. ¼ tsp baking soda / baking powder
  4. ½ tsp vinegar
  5. 1 tsp yogurt / curd
  6. 5 tbsp water, or as required
  7. ⅛ yellow food colour (optional)
FOR SUGAR SYRUP:
  1. ¼ cup water
  2. 1 cup sugar
  3. ¼ tsp saffron strands / kesar (optional)
  4. ¼ tsp cardamom powder / elachi powder

OTHER INGREDIENTS:
  1. 1 tbsp ghee
  2. oil for deep frying

METHOD:

1. In a mixing bowl, mix maida, corn flour, curd.

2. then add half tsp vinegar and water.

3. mix well in round circular directions without any lumps left.

4. now add baking soda and give a gentle mix, batter should be semi thick.

5. now pour this batter in the tomato ketchup bottles carefully, you can use plastic cones as well.

6. heat oil in a flat pan or flat kadai and add 1 tbsp of ghee.

7. squeeze the bottle or the cone to make round spirals with the batter.

8. when one side is partly cooked, turn over and fry the other side, fry till the jalebis are a light golden.

9. then immediately drop the fried jalebis in the warm sugar syrup for 30 seconds (1 string consistency).

10. For Sugar Syrup: add sugar & water in a pan and boil till 1 string consistency. Add Kesar and        cardamom powder for an aromatic taste.

11. serve delicious hot jalebis topped with some Kesar strings.
